多元化餐飲人才需求之產學合作模式研究

Abstract
餐飲相關產業在全球及亞洲地區急速發展,在展店過程中,須歷經地點的遴選到最後將產品送至客人手上;而在這過程中需要有不同層次的人才注入,才能夠有效的運作,往往需要投入大量人力才有辦法維持營運。過程中人力資源是十分重要的一環。近年來,國內外大學院校也開始積極規劃並推動「校外實習」制度,其目的在於透過企業實習以整合學校與業界的資源。透過這種「做中學、學中做」的學習規劃,但大部分的產學合作模式多為一企一校的合作模式。對於欲快速發展之企業,無法有效解決大量人才需求以及培育之困境。本研究為解決速食連鎖餐飲之困境,需尋找實務操作與管理規劃同時具備的多元性人才以及實習後可以將人才留在企業內,透過結合國立臺灣師範大學,景文科技大學及開平餐飲學校學生與覓食鐵邦美食集團共同規劃新的產學合作模式,除了基層實務操作的餐飲人才外,進而協助企業進行品牌規劃,並根據企業之理念、願景及目標制定策略目標,進而達到企業所需要的實務操作與管理規劃同時具備的多元性人才以及留住人才。本研究為質化研究之個案分析法,研究對象取樣方法為立意抽樣法 (Purposive Sampling),經整理後發現對於學校方來說,創新之產學合作會有許多行政面上的執行困難再加上認為學生是否會合適此產學合作模式,對於學生的特質有相當的關連。研究結果指向企業方若需短時間解決人力相關問題,產學合作的確是一個非常適合的方式,但需要短期內找到多元化餐飲人才,仍需在制度、行政作業上作克服。
The food and beverage industry is growing rapidly around the world and in Asia. In the process of store development, we need to go through the selection of locations and finally deliver the products to the customers. Human resources are a very important part of the process. In recent years, universities and colleges in China and abroad have started to actively plan and promote the"off-campus internship" system, with the aim of integrating the resources of schools and industries through internships in enterprises. Through this kind of "learning by doing, learning by doing" learning plan, most of the industry-academia cooperation models are mostly one-enterprise, one-school cooperation models. However, most of the industry-academia cooperation models are one-enterprise, one-school cooperation models, which cannot effectively solve the dilemma of large amount of talent demand and cultivation for enterprises that want to develop rapidly. In order to solve the dilemma of fast food restaurant chains, we need to find diversified talents with both practical operation and management planning, and to retain them in the enterprises after internship. In addition to the grass-roots practical catering talents, we will assist the enterprises in brand planning, and set strategic goals according to the enterprise's philosophy, vision, and objectives, so as to achieve the diversified talents that the enterprises need for both practical operation and management planning, and to retain the talents. This study is a qualitative research case study, and the sampling method of the study subjects is purposive sampling. After compiling the results, it is found that there are many administrative difficulties for the university to implement the innovative industry-academia collaboration, plus the students' characteristics must be very suitable for the students' suitability. The results of the study point to the fact that university-industry cooperation is a very suitable way for companies to solve manpower-related problems in a short period of time, but the need to find diversified catering talents in a short period of time still needs to be overcome in terms of systems and administrative operations.
