Abstract

咖啡豆是全球第二大貿易商品,交易量僅次於石油,根據國際咖啡組織2020年臺灣咖啡豆進口量為50,044公噸,截至2021年 9月臺灣已經進口40,889公噸,顯示臺灣的咖啡市場逐年成長。現今每間咖啡廳的咖啡師提供差異化的優質服務,以吸引更多願意來消費的顧客,咖啡師成為了整間咖啡廳的重要人物之一,臺灣目前較少研究探討咖啡師核心能力,此為本研究之目的。本研究以過去文獻進行問卷編制,歸納整理研究結果出咖啡師核心六大構面 (咖啡技能、服務技能、店舖營造、資訊服務、與顧客互動、與同事互動) 總計21題項,透過十位產學異質性專家進行內容效度的檢核,以目前從事咖啡產業的人員進行網路問卷調查,並使用李克特七點量表測量,採取立意抽樣法進行資料收集,使用SPSS 23.0進行統計分析使用重要性-滿意度分析(Importance and Performance Analysis) 與競爭對手重要性-滿意度分 (Importance Performance Competitor Analysis) 進行分析,透過IPCA分析了解獨立咖啡廳的咖啡師顯示獨立咖啡廳應致力於通過這些優勢保持其滿意度水平,咖啡師核心六大構面 (咖啡技能、服務技能、店舖營造、資訊服務、與顧客互動、與同事互動),有17個關鍵成功因素可以作為指標訓練核心因素,這些核心能力也是讓獨立咖啡廳可以繼續保有競爭力,所以對於獨立咖啡廳可以持續維持與精進這些能力,可以保持最大優勢的關鍵要素。
Coffee beans are the second largest traded commodity in the world, second only to oil in trading volume. According to the International Coffee Organization (ICO), Taiwan has imported 40,889 metric tons, showing that Taiwan’s coffee market is growing year by year. Nowadays, the baristas in each coffee shop provide differentiated and high-quality services. The barista has become one of the important figures in the coffee shop. In this study, past literature was used to compile questionnaires, and the results were summarized and sorted out to find out the six core aspects of baristas, a total of 21 items, online questionnaire survey with people currently engaged in the coffee industry, and used the seven-point Likert scale to measure, adopt the intentional sampling method for data collection, and use SPSS 23.0 for statistics Analysis using Importance and Performance Analysis and Competitor Importance-Satisfaction Score to analyze, through IPCA analysis to understand the baristas of independent cafes shows that independent cafes should be committed to through These advantages maintain their level of satisfaction. There are 17 key success factors that can be used as indicators to train core factors. These core competencies also make independent coffee shops. It is possible to continue to remain competitive, so for independent cafes to continue to maintain and improve these capabilities, the key elements that can maintain the greatest advantage.
