高職觀光科課程內涵發展之研究-以98餐旅群課程綱要為例

Abstract

近年來隨著經濟成長、國人旅遊意願的提升使我國的觀光事業開始蓬勃發展。在觀光餐旅產業已逐漸成為臺灣經濟發展重點的現今,屬於觀光餐旅之基礎教育階段的高職相關科系,是否能因應大環境改變規劃適切課程,以有效培育出知識與專業能力兼具、具備良好服務態度與觀念的人才,為值得探討之問題。本研究之研究目的為探討觀光科課程內容發展之脈絡,並以餐旅群科中心學者以及觀光科教師角度探討新課程標準(98餐旅群課程綱要)之內涵。以文獻分析法分析歷次課程標準,瞭解觀光科課程的發展演變。並以訪談法訪問餐旅群科中心學者與觀光科教師意見,研究結果顯示出新課程標準因將不同性質之類科置於同一群,在專業科目以及專業考科的制訂上,恐有弱化觀光科課程特色之疑慮,將針對此成果給予各高職觀光科在開設課程之建議,以期能提供給教育當局做為未來修訂課程之參考。
Recently, with the enhancement of growing economics and intention of travel and leisure for citizens in Taiwan, tourism market begins to develop prosperously. Therefore, the industries of tourism and hospitality have become one of the emphases on the development of economics nowadays. Due to the development of trend in the phase of basic education, whether the decision makers of relevant departments in vocational high school transform and plan the courses appropriately in order to cultivate the knowledgeable professionals with great attitudes and concepts has become an issue to be explored. The purpose of this study is to analyze the process of the development of standardized tourism courses, and explore the disadvantages and advantages aimed at the curriculum design for hospitality in 2009. The study use documentary analysis to analyze every curricula of tourism faculty and using interview law to interview the teacher of tourism department. The result showed that under the ideal of implementing multi-element and feasible new standardized course, the course may decrease the basic cultivation of students’ partial ability in tourism department. Based on the result, it is expected that it provides the suggestion about how to establish proper course of tourism department for all vocational high schools, also offers the innovation for educational authorities as references to modify curriculum design in the future.
