連鎖餐飲業訓練店訓練成效之研究

Abstract
本研究旨在討論連鎖餐飲業者如何利用訓練店來進行展店人才培訓,透過個案公司訪談了解訓練店訓練模式,並使用Kirkpatrick四層次評鑑模式來探討訓練店在組織訓練環境上的實證研究,以訓練成效評估了解學習者知識、技能及態度移轉應用在工作上,探討反應層次及行為層次的關聯性。
透過文獻探討蒐集連鎖餐飲業訓練店訓練成效資料,針對個案公司安排於訓練店接受訓練的受訓者及其轉派至新展店之直屬主管為問卷對象,在不同時間點施測,共發放100組配對問卷,回收有效配對問卷93組,回收率達93%。應用描述性統計、相關分析等方法進行研究資料分析。研究結果發現訓練店的訓練員教學專業與受訓學員在新展店的訓練應用有較顯著相關。本研究之發現可提供業界及學界在後續教育訓練應用上之參考。
The purpose of this study was to investigate how food and beverage chain store use training stores to expedite the personnel training of new retail stores in the expension process. Through case company interviews to understand their training models, 4 levels Kirkpatrick's training evaluation model was used to assess the effectineness of training stores in an organizational training environment. The participants reactions and the transfer of tranning to the new retail stores were assessed. Through literature review and empirical investigation, the trainees who were trained in the training store were selected as the questionnaire subjects, and the trainees and their current supervisors were tested at different time points. A total of 100 paired questionnaires were distributed and 93 paired of valid questionnaires were returned. The response rate is 93%. Descriptive statistics and correlation analysis were used to analyze the research data. The study found that the teaching profession has an positive influence on the training applications. The findings of this study can provide reference for the industry and academic for subsequent education and training.
