餐飲從業人員個人衛生行為及其相關因素探討 -以臺北市某餐飲企業為例

Abstract

本研究之目的在探討餐飲從業人員個人衛生行為及其相關因素。本研究採橫斷式量化研究法,以自編餐飲衛生知識量表、餐飲衛生態度量表、個人衛生自我效能量表、個人衛生行為量表為工具。採分層比例隨機抽樣法,共發出247份問卷,回收202份(81.7%)。研究結果發現如下︰ 一、 研究對象的餐飲衛生知識、餐飲衛生態度、個人衛生自我效能以及個人衛生行為,其現況表現相當良好。 二、 研究對象的餐飲衛生知識會因年齡而有顯著差異及會因從事工作資歷而有顯著差異。以及研究對象的個人衛生自我效能會因為年齡不同而有顯著差異。 三、 研究對象的餐飲衛生知識、餐飲衛生態度、個人衛生自我效能與個人衛生行為之間的關係達顯著的正相關。 四、 餐飲衛生態度與個人衛生自我效能對個人衛生行為變異的總解釋力為19.8%,其中以「個人衛生自我效能」影響力最為顯著。
This study aims to explore the restaurants personal hygiene behaviors and related factors. A restaurant chain in Taipei City, about 400 employees to study the Population and based on self-structure of questionnaire surveys, 202 people valid samples, the recovery rate of 81.7%. The major findings of the study are as follows: 1. This research has a good restaurant and health knowledge, food health attitudes, personal hygiene level of self-efficacy were significantly positive and personal health behaviors, their status as very good. 2. The object of study "dining health Knowledge" will vary significantly according to age difference a surname and will engage in work experience and a significant difference a surname. As well as the object of study, "self-efficacy personal hygiene" has a significant difference a surname because of age. 3. Health knowledge, this object of study catering, food and beverage health and attitude, the relationship between self-efficacy and personal hygiene personal hygiene behaviors significantly positively correlated. 4. " Food health attitudes ", and "self-efficacy personal hygiene" on personal hygiene behavior changes the overall explanatory power of a surname is 19.8%, with "self-efficacy personal hygiene" most significant influence.
