非凡新聞台《中國大探索》之〈杭州美食專題〉製作分析

Abstract

政府對於媒體赴大陸拍攝之相關法案,日漸鬆綁,使得台灣媒體介紹大陸風土民情之電視節目不斷增加。其十多個節目,包含:中視製播的《大陸尋奇》、年代電視的《台灣人在大陸》等,但僅年代電視《台灣人在大陸》之報導內容,對飲食文化著墨甚多,其餘節目則偏重旅遊、風土民情。 為深入瞭解中華美食,非凡電視台開始著手製播《中國大探索》,透過影像來彰顯中國之飲食文化。創作者身為資深文字記者,曾多次赴大陸採訪,但由於電視台人員控管精簡,一則專題僅2位記者負責,即一位資深文字記者,搭配一位資深攝影記者。因此,創作者必須身兼編導、企畫、採訪、後製等工作,獨立製作比例達六成以上。 〈杭州美食專題〉之主軸,為餐廳介紹、菜色製作,但為增添文稿內容和畫面之豐富性,附近風景名勝為採訪的要點之一。然欲成為好的美食報導節目,得具備有充足的素材與資訊(information)。同時,還得具感動與震撼性(impact),以及與閱聽者互動(interactive)。為吸引閱聽者目光,其箇中技術,如採訪、拍攝、撰稿敘事、後製四大要素,皆環環相扣。 產製過程圍繞四大要素,但皆與創意、產製構面息息相關。在採訪形式部分,得掌握採訪重點,分別為食材、製作過程、成品、餐廳裝潢、餐廳附近景點等。拍攝形式方面,須拿捏採光、運鏡、構圖、拍攝時間,但若能運用「分鏡圖」概念,拍攝美食成功率,將高達八成。至於敘事形式,得賦予菜色動感。在後製部分,旁白語音、配樂、音效,為專題精彩的重要幕後功臣,更是營造節目的重點推手。為讓專題更加豐富多變,須透過不同的剪接手法,讓觀眾耳目一新。同時,選擇適合音樂,讓觀眾在視聽效果上,產生大量衝擊,進而引發觀眾好奇心。 〈杭州美食專題〉為創作者攻讀研究所期間,所拍攝製作之節目。因此,以此為題,撰寫技術報告。本技術報告,係以創意、產製等二大構面,撰寫個人參與製作之〈杭州美食專題〉製作要點。具體而言,包括〈杭州美食專題〉創意階段、前製階段、拍攝階段、後製階段,呈現《中國大探索》製播之資訊與歷程。 目前國內學術領域中,對於美食專題節目之產製技術,未曾深入研究外,更未見相關技術報告。因此,〈杭州美食專題〉之技術報告,創作者分析其籌備、採訪拍攝、後製階段之製作技術,期能引起廣泛討論,並供後續有意製作,此類節目之團隊參考,將助於提升電視節目之製作水準。
In recent years, the government has been lifting restrictions on Taiwanese media out-lets shooting footage in Mainland China. As result, more and more TV shows which in-troducing China’s customs and practices have been increasing continuously, such as “Amazing China” (China Television; CTV) and “Taiwanese in China” (Era Television) are both very famous. Except “Taiwanese in China” pays more attention on food culture, rest of the programs focus on traveling and customs more. In order to understand the gourmets of Great China deeper, Unique Satellite TV (USTV) started to product a new show named “China Discovery”, to manifest the eating culture in China. Occupying as a professional reporter, the researcher have been to China to interview for many times. However, the researcher had to do the program planning and post-production at the same time since there were not enough staffs. Statistically one -man production shows are more than 60% in Taiwan now. “Hangzhou on Gourmet” is the special episode completed by the researcher during the mater study. Thus, researcher would like to reveal the features of the show “Hangzhou on Gourmet” in this thesis report. This report would be analyzed from creativity and production, two aspects respectively. This article could reflect the production details and progress of the show “China Discovery” via “Hangzhou on Gourmet” episode’s production process, such as creativity, pre-production, filming and post-production stages. So far there is no academic literature concerning the production techniques of gourmet show in Taiwan. Therefore, the researcher wishes that this report could bring the further discussion and be referred by others gourmet programs, thus to improve the TV shows’quality.
