探討新北市國小學校營養午餐剩食處理之相關因素研究

Abstract
食物浪費的主因為人們過度消費與囤積所導致,環保意識提升與剩食再利用風氣逐漸受到重視,各國也相繼用各種方法來減緩食物浪費的情形。臺灣對剩食認知與議題討論程度不如國外普及,國內也少有文獻討論營養午餐的剩食處理,多半以消費者與家庭端為主。影響剩食處理文獻較多以個人背景為主,較少有說明午餐剩食處理與學校端有直接關係。研究目的針對負責人之個人、學校背景、剩食認知等其他面向及學校剩食處理的現況,探討變項之間的相關性,並分析上述變項是否對營養午餐剩食處理有所影響。研究方法以問卷調查形式整理現階段新北市國小學校對營養午餐剩食處理方式與其相關因素,作為推廣剩食及相關研究的參考依據。研究結果可得知教育程度及服務年資對學校營養午餐剩食處理方式之想法有顯著影響。小規模與偏鄉地區學校對午餐剩食處理想法及校園環境方面的認同程度較高。學校人員對剩食的態度與看法則影響自身處理剩食行為。有執行剩食處理的學校,學校人員對教學與環境維護上有高度參與意願;完善的軟硬體設備與和諧組織氛圍也會提高學校人員的執行意願。
The main cause of food waste is overconsumption and hoarding, but environmental awareness and reuse of leftovers are becoming more and more important, and countries are using various methods to reduce food waste.In Taiwan, the awareness and discussion of leftovers are not as popular as in other countries, and there is little literature on the treatment of leftovers in the context of nutritious lunches in Taiwan, which is mostly focused on consumers and families. Literature affecting the handling of leftovers is more likely to focus on personal backgrounds, and less likely to state that the handling of leftovers at lunch is directly related to the school level.The purpose of this study is to investigate the correlation between the personal background of the person in charge, the school background, the knowledge of leftovers, and the current situation of leftovers handling in schools, and to analyze whether the above mentioned variables have an impact on the leftovers handling of nutritious lunches.The methodology of the study is based on a questionnaire survey to organize the handling of leftovers for nutritious lunches and its related factors in elementary and junior high schools in New Taipei City at this stage, which will serve as a reference for the promotion of leftovers and related research.The results of the study showed that the education level and years of service had a significant effect on the school's idea of how to handle leftovers for nutritious lunches. Small schools and schools in rural areas showed higher levels of agreement with the leftover lunch handling practices and school environment. School personnel's attitudes and perceptions of leftovers influenced their own leftover handling behaviors. Schools that implemented leftover food handling were found to have a high willingness to participate in teaching and environmental maintenance, and the availability of good hardware and software facilities and a harmonious organizational atmosphere also increased the willingness of school personnel to implement the program.
