臺北市公立幼兒園教保服務人員食品素養與其幼兒園餐點供應現況研究

Abstract
本研究旨在探討臺北市公立幼兒園教保服務人員食品素養與幼兒園餐點供應現況與其相關性。以112學年度臺北市公立幼兒園教保服務人員作為研究對象,以網路問卷進行調查,收集其個人背景資料、食品素養量表(中文修訂版)、幼兒園餐點供應量表、幼兒園餐點設計考量因素與實施困擾等作為研究工具,共回收有效問卷324份。主要研究結果如下:一、臺北市公立幼兒園教保服務人員在食品素養整體表現良好,其中兼任行政職者其食品素養整體較佳,且在設計餐點時考量的因素較多。二、臺北市公立幼兒園餐點供應現況整體表現優良,且兼任行政職與教學年資較資深的教保服務人員的餐點供應現況較佳。三、臺北市公立幼兒園教保服務人員的功能性與批判性食品素養與食品內容呈正相關,而互動性食品素養與營養基準為負相關。依據以上研究結果,本研究提出對教保服務人員、幼兒園及教育主管單位的相關建議,期望能為未來教師專業發展、餐點供應以及政策制定提供參考。
This study aims to explore the relationship between the food literacy of preschool educators and the current status of meal provision in public kindergartens in Taipei City. The research targeted preschool educators in public kindergartens during the 2023 academic year. A web-based survey was conducted, collecting demographic data, food literacy using the Chinese Revised Food Literacy Scale, a meal provision scale, as well as factors considered in meal planning and implementation difficulties. A total of 324 valid responses were collected. The key findings are as follows:1. The preschool educators in Taipei City performed well overall in food literacy, with those holding administrative positions showing better food literacy and considering more factors when designing meals.2. The overall status of meal provision in public kindergartens was excellent, with preschool educators in administrative roles and those with more teaching experience demonstrating better meal provision practices.3. The functional and critical dimensions of food literacy among preschool educators were positively correlated with food content, while the interactive dimension of food literacy showed a negative correlation with nutrition standards.Based on these findings, recommendations are provided for preschool educators, kindergartens, and educational authorities, aiming to offer insights for future professional development of educators, meal provision practices, and policy formulation.
