台南縣某國中學生早餐行為及其相關因素研究

Abstract
本研究之主要目的是為了瞭解臺南縣某國中97學年度7、8、9年級學生早餐行為現況,並探討社會人口學變項(性別、年級、主要照顧者教育程度)、素質因素(食用早餐的知識、態度與自我效能)、使能因素(早餐的便利性、早餐的可獲性)及增強因素(家人、師長、同儕對食用早餐行為的社會支持)對早餐行為的影響。採分層隨機集束抽樣,抽取樣本共670位進行問卷調查,回收有效樣本627份,所得資料以描述性統計、多元迴歸進行分析,重要結果歸納如下:
一、影響早餐行為階段的社會人口學變項有「年級」,素質因素有「知
識」、「態度」、「自我效能」,使能因素有「早餐的便利性」,增強因
素有「家人對早餐行為的支持」。
二、影響早餐種類的社會人口學變項有「年級」、「主要照顧者教育程
度」,素質因素有「知識」、「自我效能」,使能因素有「早餐的便利
性」,增強因素有「家人對早餐行為的支持」。
三、影響早餐頻率的素質因素有「自我效能」,使能因素有「早餐的
便利性」,增強因素有「家人對早餐行為的支持」。
The main purpose of this study was to understand the students’ current situation of breakfast behavior. The subjects are the seventh, the eighth, and the ninth grade of Yong-Kong Junior High School in Tainan Country. We also predict the influence of predisposing factors(age, grade, the education of primary caregiver, knowledge, attitude, and self-efficacy), enabling factors(convenience for taking breakfast, places for taking breakfast), and reinforcing factors(the support of family, the support of friends, the support of teachers)for breakfast behavior. By using stratified cluster sampling method, 627 respondents out of 670 samples were selected to participate in this study. Then Descriptive Statistics and Multi-Analysis Regression were adopted to explain the effects. The major findings of this study are summed up as follows: (1)Grade, Knowledge, attitude, and self-efficacy of predisposing factors, convenience for taking breakfast of enabling factors, the support of family of reinforcing factors affect the stage of breakfast behavior. (2)Grade, the education of primary caregiver, knowledge, and self-efficacy of predisposing factors, convenience for taking breakfast of enabling factors, the support of family of reinforcing factors affect the kinds of breakfast food. (3)Self-efficacy of predisposing factors, convenience for taking breakfast of enabling factors, and the support of family of reinforcing factors affect the frequency of breakfast eating.
