Abstract

本研究主要的目的以台北地區公寓式住宅廚房空間中的婦女使用者為研究對象,透過文獻分析法、參與觀察法以及深入訪談法,將廚房定義、認知、領域性、現況與修繕、使用情形、廚房空間期待、廚房設計現況發展等進行觀察、訪談,並歸納分析,研究結果為: 1.廚房空間量會影響廚房定義、認知及領域性,而封閉式廚房也將影響廚房領域性觀點。 2.除了職業類別、在家時間的長短、家庭飲食習慣與文化、家庭模式與人口數會影響廚房烹調頻率外,家庭生命週期、宗教信仰、假日活動等因素也會對烹調頻率產生影響。 3.廚房空間量充足是廚房烹調效率與否的首要條件,然而空間量的不足、廚具縮小、作業域壓縮、清潔不易、插座數量規劃隨之減少等,勢必會影響烹調效率。 4.廚房設計的首要決定者並非由業主個人的喜好為主,而是以空間量決定廚房型式。 5.目前國內新建的集合住宅中,在廚房空間量的規劃上仍有不足的問題。
The objects of this research are women who work at kitchens in apartment buildings in Taipei city. We will look into this research from women and designers’ perspectives through documents analyzing, observing, and deep interviewing to do interviews, observations and inductive analysis of the definition, cognition, territoriality, current status and repair, the usage of kitchens, the expect of kitchen place and the develop of designs.The findings of this research shows as follows: 1.The size of kitchen will influence the definition ,cognition and territoriality of kitchens. And the pattern of kitchens will also influence the view of kitchen territoriality . 2.Except occupational categories ,the duration staying home ,family diet habits and culture ,the family life circle ,religious beliefs and holiday activities will also affect the frequency of cooking . 3.Adequate space of kitchen is the main condition of cooking efficiency. The less space and working area of kitchen, the smaller utensils and less sockets,these will affect the efficiency of cooking. 4.The design of kitchen is not all depends on owner’s favor, it depends on the kitchen space. 5.The problem of inadequacy at space of kitchen planning is still being in new Congregate housing.
