資訊圖表之創作研究 - 以臺灣當令食材製作之健康營養食譜為例

Abstract
隨著網路及科技的發達，資訊生產的速度及散播的速度也驚人的速度成長，奈思比（John Naisbitt）在其《大趨勢》一書中提到：「現在我們用過去大量製造汽車的方式大量生產資訊。」資訊爆炸的時代造就了人們對資訊的異常焦慮。因此如何將資訊正確又有效率的傳遞給觀眾已成為一重要課題。加上現代社會的進步與發展，國民大眾也對飲食健康越來越注重，故本研究選擇能處理複雜資訊的資訊圖表（Infographics）作為健康食譜的資訊表現，期待能以更吸引人及更具效率的方式來推廣健康飲食的概念與方法。
本研究在文獻探討將分成資訊圖表及臺灣蔬果兩大類做探討。資訊圖表將從其歷史、種類以及案例研究切入，並以SND（Society for News Design）的五項資訊圖表評量方式：吸引力、明確性、精簡性、視覺動線、無需文字等作為案例研究的主要內容，並依此歸納出設計資訊圖表之方法與原則。而在臺灣蔬果部份，依據當令季節所盛產的蔬果與營養價值，以湯品料理作為本次創作食譜時的主題與內容，分別設計一至十二月的食譜資訊圖表，每件食譜均包含食材配方、料理方法、食材營養成分與功效等，計有「木瓜山藥銀耳羹」、「起司洋蔥海鮮湯」、「蒜頭雞湯」、「義式蕃茄蔬菜湯」、「福菜桂竹筍排骨湯」、「水波蘆筍湯」、「苦瓜排骨湯」、「干貝絲瓜湯」、「高麗菜味噌湯」、「蘿蔔排骨湯」、「芥菜雞湯」和「大白菜鮮肉湯」等十二件作品。
本創作作品希冀能以淺顯易懂及具有吸引力的方式，讓觀眾能夠瞭解各種蔬果的好處以及相關的料理方式。主要目標為不常料理的閱讀者，因此在資訊設計上的安排必須以非專業廚師能理解為要，力求初次閱讀即可輕易理解資訊內容。在後續研究上建議可以多媒體以及動態、互動等呈現形式，以更多元的影像和聲音媒體，讓民眾藉由動態時間順序理解食譜的資訊。
As the development of the Internet and technology, the production and dissemination of information is growing with amazing speed. In his book, Megatrends, John Naisbitt observes that we now mass-produce information the way we used to mass-produce cars. The information explosion era causes people great anxiety. To get the information across correctly and efficiently has become an important issue. With the progress and development of modern society, people put more and more emphasis on healthy diet. The research presents healthy recipes with infographics to promote the concept and methods of healthy diet in a more effective and interesting way. The research probes into the issue in two aspects: infographics and vegetables and fruits in Taiwan. The infographics deals with three dimensions, including history, category, and case study, by using the evaluation criteria of SND (Society for News Design): attraction, accuracy, conciseness, visual movement, no use of text, from which I conclude the methods and principles of designing infographics. As for vegetables and fruits in Taiwan, harvest seasons and nutrition facts are used to design a chart for healthy recipes and meals. The research aims to adopt a readily understandable and interesting approach to the benefits of each vegetable and fruit and relating recipes. As the main target is people who can’t cook, the information has to be fairly comprehensible to make sure that the readers get the gist at the first time. The following research will adopt a more diverse and interesting approach to introducing recipes by multimedia, presenting information in interactive motion graphics.
