中藥從業人員對藥膳飲食調理知識、態度和行為之研究

Abstract

藥膳飲食為促進健康的有效方式之一。中藥從業人員為經營中藥批發、零售、調配、輸入及輸出之業者,其對於藥膳飲食的知識、態度與行為對於民眾藥膳飲食知能可能扮演著重要的角色,但過去較少有研究針對中藥從業人員進行探討。據此,本研究擬運用KAP理論,探討中藥從業人員對藥膳飲食調理知識、態度和行為的現況及關聯性。本研究為橫斷性研究設計,於2021年9月至11月間以便利取樣方式,透過網路問卷調查研究對象個人背景變項,及其對於藥膳飲食調理的知識、態度與行為。資料分析利用SPSS 23.0進行平均數、標準差、皮爾森相關分析、獨立樣本T檢定與單因子變異數等方式進行分析。本研究之主要發現如下: (1) 研究對象的藥膳飲食調理知識與態度呈現正相關,在藥膳飲食調理知識與行為及藥膳飲食調理態度與行為皆為負相關。(2) 研究對象的年齡與藥膳飲食調理知識有關聯,年齡越高有較高的藥膳飲食知識;研究對象是否罹患慢性病與藥膳飲食調理行為有關聯性,慢性病罹患種類越多者具有較高之藥膳飲食調理行為分數。本研究結果可協助了解中藥從業人員對藥膳飲食的知識、態度與行為現況,擬訂在職增能獲教育方向,進而提昇其相關專業知能,同時對於未來研究提供參考。關鍵詞: 中藥、食補、知識-態度-行為理論
Medicinal cuisine diet is one of the effective strategies of health promotion. Chinese herbalists are the dealers of wholesale, retail, prescription, import and export for Chinese medicine. Therefore, the knowledge, attitude and behavior of Chinese herbalists may play key roles of public’s knowledge and skills. However, limited studies have examined this issue. Based on KAP theory, this study examined the situation and associations of Chinese Herbalists’ knowledge, attitude and behavior toward medicinal cuisine diet. During September and November 2021, a cross-sectional online study using a convenient sampling was conducted to examine Chinese Herbalists’ knowledge, attitude and behavior toward medicinal cuisine diet. Descriptive statistics, Pearson correlation, independent t test and ANOVA were performed using SPSS 23.0. The main findings of this study were (1) the knowledge and attitude toward medicinal cuisine diet were positively correlated, whereas the knowledge and attitude were negatively correlated with behavior. (2) Age is associated with knowledge toward medicinal cuisine diet. Respondents with older age had higher scores of knowledge, toward medicinal cuisine diet. Number of chronic diseases is associated with behavior toward medicinal cuisine diet. Respondents with more chronic diseases had higher scores of behavior toward medicinal cuisine diet. This study can provide the current situation of Chinese Herbalists’ knowledge, attitude and behavior toward medicinal cuisine diet, which can inform education/training program design for future studies.Keywords: Chinese medicine, dietary supplementation, KAP theory
