郭鐘隆Guo, Jong-Long王云千Wang, Yun-Chien2020-10-19不公開2020-10-192019http://etds.lib.ntnu.edu.tw/cgi-bin/gs32/gsweb.cgi?o=dstdcdr&s=id=%22G060305006E%22.&%22.id.&http://rportal.lib.ntnu.edu.tw:80/handle/20.500.12235/110065研究目的:發展高中職生的外食選擇素養量表和探討影響高中職生外食選擇素養的高中職生個人與家庭層面之可能因素。 研究方法:本研究採立意取樣抽取6所學校,用自填問卷方式調查,發出287份問卷,最後回收有效問卷為237份,回收率82.57%。資料處理方法包含以驗證性因素分析(confirmatory factor analysis, CFA)來檢測因素結構與健康素養理論之適配性檢定,及以階層複迴歸(hierarchical multiple regression)去探討影響高中職生外食選擇素養的高中職生個人與家庭變項。 研究結果:經CFA檢測結果顯示測量模型適配度良好,外食選擇素養量表分三個構面:功能性、互動性及批判性;經階層複迴歸與高中職生外食選擇素養有顯著相關變項:健康狀況、體型滿意情形。 研究結論:高中職生的外食選擇素養量表具有良好信效度,本研究亦支持健康狀況、體型滿意情形為外食選擇素養之顯著相關因子,期望能夠給教育單位、營養師和實務工作者及未來研究者作一參考,增加其提出具體可執行之建議,以提升高中職生的外食選擇素養。Objectives: This research aims to develop a questionnaire to assess senior high students' literacy of food choices when dining out, and to investigate the influential factors related to personal, and family, domains on senior and vocational high students’ food choice literacy when dinning out. Methods: This research recruited participants from six schools. A questionnaire was used, with a total of 287 copies issued and 237 valid copies retrieved. The response rate was 82.57%. The Confirmatory Factor Analysis (CFA) was conducted to examine the factorial structure and health literacy theory. Hierarchical Multiple Regression was used to investigate the influential factors related to personal, and family domains on senior and vocational high students’ food choice literacy when dinning out. Results: Through CFA examination, it showed that items fit the measurement model which was a good-fitting model. The questionnaire on senior high students’ food-choice literacy when dining out was of three dimensions—functional, interactive/communicative, and critical. The significant variables regarding the dining-out literacy were—students’ health conditions, and their self-consciousness of body sizes. Conclusion: This questionnaire regarding to senior and vocational high students’ food-choice literacy when they dine out is of good validity and reliability.
