張育愷Chang, Yu-Kai李秋龍Li, Cho-long2023-12-082022-08-162023-12-082022https://etds.lib.ntnu.edu.tw/thesis/detail/2c6ea7527a64d2336250b3ce1f1ece60/http://rportal.lib.ntnu.edu.tw/handle/20.500.12235/118712摘要 台灣飲食文化多元,外食市場有著龐大的商機,自2020年起,新冠肺炎肆虐全球,這一波疫情對餐飲業造成嚴重衝擊,對火鍋店更是影響。隨著政府積極推動國人接種新冠疫苗,國內疫情逐漸趨緩,餐飲業也隨之復甦。在台灣,無論春夏秋冬隨處可見火鍋店,有屬於個人鍋的涮涮鍋、石頭火鍋、麻辣鴛鴦鍋等等,火鍋種類求新求變多到不勝枚舉。足見火鍋在餐飲業中占了舉足輕重的地位,龐大的商機使大家皆躍躍欲試,搶進火鍋業大展身手創造利潤。業者在選擇經營火鍋型態時,有更多求新求變的選擇,使消費者可以根據自己的偏好來選擇喜好的火鍋種類。 問卷以網路問卷方式來進行調查,所得資料以SPSS Statistics28.0套裝軟體為工具進行統計分析,依據這四項構面「消費者喜好」、「食材」、「服務與回饋」、「環境與交通」,擬定消費者之所以喜好個人鍋之可考量因素為研究對象。根據分析結果了解消費者對於火鍋選擇的考量因素,其中平均數最高的前三名為「餐點衛生」、「店內逃生安全」、「食材新鮮度」。由此可知這三項可能是消費者在選擇火鍋店時具有某種程度的影響力。 關鍵字:火鍋店、偏好、消費者、影響力、樹林區、餐廳Abstract Taiwan's food culture is diverse, and the food market has huge businesses. Since 2020, the COVID-19 all over the world. Serious impact on restaurants, especially hot pot restaurants. As the government actively promotes people to be vaccinated, the COVID-19 has gradually slowed down, and the food service has also recovered. In Taiwan, hot pot restaurants can be found everywhere at any time. There are too wide varieties to enumerate like shabu-shabu, stone hot pots, spicy twin-side hot pots, etc. It shows that hot pot has played a decisive role in the catering industry and attracts investors to the market. Hot pot operators need to provide innovative options so that consumers can choose the type according to their preferences.Keywords: Hot Pot, Preference, Consumer, Influence, Shulin District, RestaurantSurvey using online questionnaires, and the data obtained were statistically analyzed by SPSS statistics28.0 software analysis. According to the analysis results, we can know the factors of consumers consider when choosing hotpot, among which the top three with the highest average are "food hygiene", "in store escape safety" and "freshness of food materials".
