陳玉箴許佩賢Chen, Yu-JenHsu, Pei-Xian許茹茵Hsu, Ju-Yin2024-12-172024-07-182024https://etds.lib.ntnu.edu.tw/thesis/detail/cb880c62a6f8d415a6a56ab52c4b442c/http://rportal.lib.ntnu.edu.tw/handle/20.500.12235/123001在現代臺灣人的日常飲食中,充斥著各式各樣的西式餐點。根據臺北市衛生局2019年的調查,臺北市民最常購買的早餐前兩名均是西式的食物。速食店、牛排館等西式餐廳林立在臺灣的大街小巷。中菜西烹、中西兼具的料理也時有所聞。西式餐點的普及不單單只展現在店家的數量上。本研究統整「1945-1990年代臺灣出版之西式餐點食譜書書目」,以戰後臺灣出版且收錄西式餐點食譜之食譜書作為主要的研究資料,並與西式餐點從業人員的訪談和相關文獻進行交互驗證。本研究發現,1945年至1990年代出版的食譜書數量在不同時期具有顯著的差異,且出版目的也從戰後初期的「為宣傳中華文化」,到1960年代中期除了「為了配合國家政策」而出現的教科書式食譜書,坊間也開始有內容更為豐富、裝訂更為精美的食譜書,反映大眾逐漸對烹製西式餐點產生需求;1980年代之後,西式餐點食譜書不僅出版量大幅增加,出版社也開始針對該時期民眾的需求而規劃不同主題的食譜書,內容也變得更加多元,顯示西式餐點逐漸普及。食譜書數量的增加代表著臺灣社會對於西式餐點烹飪需求提高,再加上食譜書類型及餐點區分界線逐漸模糊,「中式」、「西式」不再是主要的分類依據,顯示西式餐點在一定程度上已深入到臺灣大眾的日常飲食中。In modern Taiwan, a variety of Western-style dishes abound. According to a survey by the Department of Health of Taipei City in 2019, the top two most purchased breakfast items by Taipei citizens are both Western-style foods. Fast food restaurants, steakhouses, and other Western-style eateries line the streets and alleys of Taiwan. There's also a prevalence of dishes that combine Eastern and Western culinary techniques. The popularity of Western food is not only evident in the sheer number of establishments. The research compiled a list of " Taiwanese Published Western Food Cookbooks (1945-1990s)." These post-war Taiwanese publications serve as the primary research material, supplemented by interviews with professionals in the Western-style culinary industry and relevant historical documents. The study found significant variations in the number of cookbooks published between 1945 and the 1990s, with publishing objectives shifting from early post-war efforts to promote Chinese culture to the emergence of textbook-style cookbooks from the mid-1960s, which were produced to align with national policies. Over time, cookbooks became more diverse and elaborate, reflecting a growing demand for Western food and its increasing popularity.From the 1980s onwards, there was a significant increase in the number of Western food cookbooks published, with publishers catering to the specific needs of the era's populace by offering books on various themes. This proliferation of cookbooks indicates a rising demand for cooking Western food in Taiwanese society.
