廖偉民Liao, Wei-Ming陳紫含Chen, Tzu-Han2020-10-192021-07-152020-10-192020http://etds.lib.ntnu.edu.tw/cgi-bin/gs32/gsweb.cgi?o=dstdcdr&s=id=%22G060768020T%22.&%22.id.&http://rportal.lib.ntnu.edu.tw:80/handle/20.500.12235/111466消費者選購食品時會參考包裝上的說明,其中營養標示包含營養成份、含量及營養宣稱,購買前閱讀營養標示,有助於消費者自主規劃符合個人需求的飲食,然而挑選商品的時間短暫,專有名詞對於一般大眾較為生澀,更不容易理解營養成份說明。若利用資訊視覺化的方式重整呈現,能夠吸引消費者的注意力與了解產品。本研究透過文獻探討資訊視覺化與其應用形式,並針對臺北市大型百貨公司附屬超市、大賣場、連鎖超市以及量販店等自助式賣場,蒐集 112 件有應用資訊圖表的食品包裝,以內容分析法分析得到其中有 25% 的包裝會使用縱橫排列的「表格」編排訊息,且同一個包裝可能包含不同類型的圖表;圖表的主視覺以「插畫表現」最多,佔 66%,相較於真實照片或是僅有文字,圖文解說資訊更清晰,同時可以形塑商品風格;圖表內容以說明「營養價值」最多,佔 38% ,如此可協助消費者挑選符合自己需求的商品;這類產品以「全穀雜糧類」最多,佔 23% ,穀麥產品的獨特配方組合相當繁複,消費者不易由純文字的說明理解,此時運用清晰可見的資訊圖表說明可解決此問題。最後創作「根莖類碳水化合物含量」、「助眠物質的作用」、「雞蛋烹調後的營養比較」、「炸雞的吸油量與熱量比較」、「每日所需的蛋白質食物份數」、「高鈣食物表」、「醣和糖的種類」、「保護眼睛的植化素」、「彩色蔬菜」、「維生素C含量比較」、「烹調用油的選擇依據」以及「每日飲食指南」 12 件視覺化之營養資訊,分別應用於玉米粒、小麥胚芽粉、雞蛋、雞胸肉、豬里肌、優酪乳、優格、菠菜、玉米筍、芭樂、芥花油及杏仁果等食品包裝。期望供未來食品包裝設計與公共衛生營養學領域參考,增加消費者獲得正確營養資訊的管道,提升營養知能,促進國人均衡飲食改善健康狀態。Information on packaging affects consumers’ purchase decision. Read the nutrition facts, ingredients, amount and claim could help people make diet plan themselves. As a result of difficult noun and limited time, the nutrition ingredients are hard to understand. “Data visualization” shows the information in a visual way, in order to attract attention and make information understandable. In this study, through literature discuss the application of data visualization. Then collect 112 food packagings in supermarket and hypermarket located in Taipei, analysis samples by content analysis. Results are that “tables” is the most often type of graphics on food packaging (25%), and it is possible that there are more than one type of graphics on the same packaging. Second, compared to photos and text, “illustration” is the main visual identity on food packaging (66%), it is clearer and makes products stylish. Third, To explain “nutritional value” is the main function of graphics (38%), it is helpful for consumer to pick up suitable products. Fourth, “whole grains” is category which most often apply infographics to packaging (23%), it is a clearly way to show the special formula. The last part of this study is 12 data visualization of nutrition ingredients, including “content of carbohydrate in grains”, “synthesis of melatonin”, “nutrient retention rate of egg”, “calories of fried chicken”, “daily portions of protein”, “calcium content of food”, “carbohydrate and simple sugar”, “eye-protected phytochemicals”, “colorful vegetables”, “vitamin C content of guava”, “how to select edible oil” and “dietary guideline”. Then apply to packagings of corn kernel, wheat germ powder, egg, breast halves, lean pork, fermented milk, yogurt, spinach, baby corn, guava, canola oil and almond respectively. The results could be reference for food packaging design and public health nutrition.
