針對重大疫情延伸的經營風險的因應策略-以手搖飲店為例

Abstract
在新冠肺炎發生後,手搖飲店在經營上面臨重大危機,為克服此一二十一世界最大的黑天鵝,本研究進行深入訪談,訪談對象包含分店長與兩位管理人員,根據訪談內容,本研究對手搖飲業營運策略進行改善建議,研究分析結果顯示,個案手搖飲業者最在乎的是營業管理、分店規劃與人力配置,而離職率過高是案手搖飲業者最想處理與解決的問題;本研究並提出加強手搖飲店消毒防疫措施、提供檢疫設備、戶外用餐宣傳、與外送業者合作、用餐區域位置調、發展無人機外送系統等經營因應策略以供管理者參考。
After the outbreak of COVID-19, the hand-cranked beverage store is facing a major crisis in operation. In order to overcome the biggest black swan in the world, this research conducted a questionnaire interview. The interviewees included the branch manager and two managers. According to the interview content, this study provides suggestions for improving the operation strategy of the hand-cranked beverage industry. The results of the research and analysis show that the hand-cooked beverage industry is most concerned about business management, branch planning and manpower allocation, and the high turnover rate is the most important thing for the hand-cooked beverage industry to deal with. This study also proposes business response strategies such as strengthening disinfection and epidemic prevention measures for hand-cranked beverage stores, providing quarantine equipment, publicizing outdoor dining, cooperating with delivery operators, adjusting the location of dining areas, and developing drone delivery systems for manager as reference.
