Abstract
台灣在日本殖民統治之下開始了許多現代化的政策,這些政策涵蓋了教育、衛生、醫療、經濟等廣泛的層面,目的在於加強對殖民地的控制與經濟利益的榨取。諸多現代化的施政不只改變了台灣人的習慣與文化,同時也改變了台灣人的生活內涵。本文透過探討松山地區在日治時期市場的發展,以較小的區域並嘗試分析日本殖民政策下改造的市場來瞭解當時台灣人生活的樣貌。透過松山地區日治時期區域發展資料的整理,配合市場公設化後對市場內販賣物品的管理與控制,瞭解日治時期殖民政府的市場政策首重衛生的改善,其次才是經濟的控制。而台人的消費飲食習慣也因為衛生改善與日人文化傳入而開始有了變化,殖民政策對於市場的管理雖著重於衛生與經濟,但對於市場數量與位置的限制也間接的影響了松山地區民眾的消費習慣。透過統計資料的分析與政策推行的脈絡,瞭解到松山市場的供應商品以豬肉為主,並受到鄰近南港地區新建市場的影響,而令其商品供應圈產生變化在1930年左右產生了明顯的變化。松山最重要的商業區域錫口街也因此與松山市場呈現分工的現象,由錫口街提供服務業、金融、生活日用品、醫藥的服務,市場則專營生鮮飲食,兩者所吸納的消費人口促成了錫口街與松山市場的繁榮。而松山地區的日本人在居住區域、消費習慣上因與台灣人不相同,同時佔松山地區人口比例甚低,因此對於市場的影響甚小,也顯示了日本人與台灣人在消費行為上有所區隔。日本殖民末期松山地區市場因受到戰時體制下經濟控制的衝擊,在經營上產生困難而直接反應在交易額大幅下滑,也因此造成黑市交易的猖獗。本文也透過統合祭祀圈、文獻資料、舊地籍定位今日位置,來重建松山地區各聚落的位置和錫口街的商業連結,同時也完成了1940年代錫口街街道的復原圖,並配合口述訪談資料試著重建日治時期松山地區的生活樣貌。
